Blue Bell French Toast

Ingredients

  • 1 cup melted Blue Bell Homemade Vanilla Ice Cream
  • 3 eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 8 thick slices of bread (day-old brioche, challah or hearty country white is recommended)
  • Cooking spray
  • Suggested toppings: Blue Bell Ice Cream, fresh berries, chocolate chips, chopped nuts, maple syrup, honey, whipped cream

Directions

  1. Pre-heat non-stick griddle on medium-low heat to 375°.
  2. In a shallow bowl, whisk together the melted ice cream, eggs, vanilla, and cinnamon.
  3. Dip both sides of each slice of bread into the mixture, making sure the bread soaks up plenty of batter.
  4. When you’re ready to cook, lightly coat the griddle with cooking spray.
  5. Cook battered bread on each side for 2–3 minutes, or until golden brown.
  6. Place two slices on each plate and add your favorite toppings, beginning with a scoop of Blue Bell Homemade Vanilla Ice Cream. Bon appétit!
