"Birthday" Cake and Ice Cream
7 scoops Blue Bell Cake and Ice Cream (ice cream) (approximately 2/3 cup each) 4 t. multi-colored candy sprinkles, approximately birthday candles, appropriate number for your celebration
Using chilled 8 - 10 ounce straight-sided drink glasses (2 ¾-inches to 3-inches in diameter), place one generous scoop of ice cream in each glass. Ice cream should set inside glass (Ice cream can be scooped in advance. Cover each glass with foil and place in freezer.). When ready to serve, place one glass in center of round cake plate. Place other glasses around the center glass so that all glasses touch the center glass and the glasses beside each other touch (to form a round "cake"). Sprinkle each scoop with approximately ½ teaspoon sprinkles. Place a candle in the center of each scoop or arrange candles as desired. Light candles, sing "Happy Birthday" and serve. Use only the number of glasses needed to make a round "cake" for the presentation. If more desserts are needed, fill additional glasses as needed. Makes one serving per scoop.
Note: To make the presentation even more festive, tie colorful ribbon(s) around the "cake".
