Blue Bell Pecan Praline "Delight" Pie

Crust:
3 egg whites
1 cup sugar
1 cup crushed Pecan Sandie Cookies
½ teaspoon cinnamon
½ cup chopped pecans

Filling:
1 quart Blue Bell Pecan Pralines 'n Cream Ice Cream, softened
Small jar caramel topping
Whipped cream

Preheat oven to 350 degrees. Prepare crust: Beat egg whites until stiff. Add sugar gradually and beat until egg whites are glossy and stiff peaks form. Add vanilla. Mix together crushed cookies, pecans and cinnamon. Fold into egg mixture. Pour into 10" well-greased pie plate. Smooth out center and build up sides. Bake for 30 minutes and cool completely before adding filling.

Prepare filling: Soften Blue Bell Ice Cream just enough to stir. Fill cooled shell with ice cream. Spread caramel topping over ice cream. Return to freezer for 1 hour. Top with whipped cream before serving.
